You will need:-
1 piece of good aged fillet
1 mixed punnet of Mushrooms
Olive oil
Garlic
Butter
Puff pastry
Sear the fillet both sides in olive oil and butter in a pan
Allow to rest
Fry mushrooms in garlic and olive oil – then mash and drain excess liquid
Roll out puff pastry
Spread half of the mashed mushrooms on the puff pastry
Place the fillet on top of the puff pastry (mushroom paste underneath)
Spread the rest of the mushrooms on top of the fillet
Roll pastry over fillet
Beat an egg and brush the top of the puff pastry
Place in the Cobb on a Fenced Roast Rack OR Frying Pan
Cook for 45 min to an hour depending on your meat preference.
